I was just wondering if anyone on here likes to cook and if so, do you want to share your recipes?

Wintergreens blueberry muffins

* 1 stick of butter
* 1 cup sugar
* Depending on how lemony you want them 1/2 to 2 tablespoons lemon juice
* 2 eggs
* 1/2 cup milk
* 2 cups flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 2 teaspoons lemon zest
* 1/8 teaspoon nutmeg (optional)
* 2 cups blueberries
Put in 350 degree oven for 20 25 min

umm-I think this is it. I never write these things down.
At least I don't have flies in my eyes.

Stir Fry:
  • Onion [However you like it. I cut mine into big chunks]
    Garlic [diced]
    Ginger [diced]
    Meat (Optional)
    Broccoli [chopped]
    Baby Bok Choy [chopped]
    Carrots [chopped]
    Zucchini [chopped]
    Can of chunked pineapple
    Other vegatables [optional]
    Sauce
Onions, garlic, ginger and kosher salt go first. Those are called aromatics and usually go first when cooking anything. After a few minutes add everything else, some black pepper, a little soy sauce and the juice from the pineapple.

The sauce goes in two minutes before you want to eat it. You know it's time when all the vegetables are the right doneness for you. Since you can eat them all raw it's a personal preference. For the sauce I use whatever random stir fry sauce I have in my fridge or a mixture of Oyster sauce, soy sauce and rice wine vinegar.

I serve the stir fry over rice. When you cook rice throw in some rice wine vinegar. What makes good sushi good is the whatever spices are in the vinegar that they use to cook the rice.

I usually don't put meat in my stir fry but pork is good. Any meat would work just fine. Add the meat when you would normally add the second round of vegetables. Cook until the meat pretty close to done, then add the remaining vegetables.

I probably eat this almost once a week and make enough to have some leftovers.

My peanut butter white chocolate rice crispy treats.

1 box of rice crispy cereal
1 bag of white chocolate chips
1 jar of creamy peanut butter

Okay so buy a box of rice crispy treats and make them like it says on the box. But when you have just the plain cereal before you add marshmellows put in as much or as little white chocolate chips as you want. Then continue making them.
Put them in the pan thingy and then heat up some peanut butter Cremey (I like Peter Pan kind but that 'cause its Peter Pan.) till its melted and then poor it over the top and let it cool and harden.

Was that sarcasm? I like how Caps ingredients were just add to taste for everything. I've been making stir fry a lot lately though. I'll have to try the pineapple. When I make it I usually marinate the meat (I tend to use chicken) in soy sauce, lemon pepper, and I can't remember what else right now while I prepare the rest of the veggies. I also definitely prefer crispy veggies though. I always use rice but have been thinking of using noodles soon.

I use a LOT of ginger. It's all to taste. For vegetables it's basically equal amounts of everything.

Thats true with cooking but not with baking.

My two favorite recipes are made by me, there mostly just for quick food thats cheap enough for a bum.

Gamer Ramen
1 pack of any type of ramen
1 bowl
water(see later)

1. Poke holes in the ramen package to let out air (knives work)
2. Crush the ramen up inside the package so that there are no clumps
3. Empty the package into the bowl and take the seasoning packet out
4. Add just enough water to make the noodles start to float
5. Put bowl in the microwave for 2 minutes and 30 seconds
6. Add seasoning to the finished ramen and mix.


Ghetto Nachos
1 Plate
1/4 bag of doritos (nacho flavored)
*cheddar cheese

1. Put atleast 2 handfulls of chips onto plate
2. Put as much cheese as you want (measure into handfulls)
3. Place plate into microwave and set the time for 60 seconds and 10 seconds more if the cheese hasnt melt.
4. Enjoy

Redskin potato salad. I make it at work for the salad case, it's not my recipe though, it's the head salad chef's.

Redskin potatoes (quartered)
Red onion
Red pepper
Green pepper
Buttermilk ranch (we don't measure it, we just add enough until it hits a nice consistency, but not too watery)
Lemon pepper
Salt
Dill

I don't know measurements, because I make mass amounts of it at work. The spices are just to taste, and you can change the amount of vegetables depending on how much you want to make.

Big Johns Gumbo

Ingredients:
2 Pounds chicken breast & Thighs
1 Pound okra (fresh or frozen)
10 Cups chicken stock
1 pound Andouille Sausage cut into ¼ inch slices
2 Medium onions – chopped
1 Bell pepper (I prefer red) –chopped
1 ½ cup celery – chopped
One 14 ½ ounce can of chopped tomatoes, including juices

Ingredients for Roux:
¾ Cup Vegetable Oil
¾ Cup Flour

Spices:
2 bay leaves
1 Teaspoon Thyme
½ Teaspoon Basil
½ Teaspoon Sage
½ Teaspoon White Pepper
½ Teaspoon Garlic
½ Teaspoon Cayenne pepper
¼ Teaspoon Cinnamon
Salt to taste

Roux:

¾ Cup Flour
¾ Cup Oil
1. In large Stock pan, cover chicken with water & simmer until tender and the bones can be easily removed. Pour off stock & SAVE IT! Allow chicken to cool, remove bones.
2. In clean pot, heat oil to prepare for Roux. I’ll cover this more later.
3. When Roux is a deep chocolate color, add onions, celery and peppers. Then cook for about 5 minutes. TURN DOWN THE HEAT after adding veggies to the Roux.
4. Add okra, canned tomatoes, Andouille sausage, chicken stock & spices. Simmer for about 1 ½ hours or longer. (The longer, the better!)
5. Serve over hot white rice.

How to make a Roux:

1. Heat ¾ Cup of oil under med/high heat until VERY hot.
2. After oil is VERY HOT, add ¾ cup of flour and stir CONSTANTLY in a frenzy, making sure there are no lumps. The mixture will bubble, which means that the moisture is being boiled out. (You want this to happen)
3. When the moisture is boiled out, it mix will develop a nutty aroma and will brown rapidly. Keep stirring with wire whisk until it is a chocolate color
4. Immediately –I say again… IMMEDIATELY - after obtaining chocolate color, reduce heat add veggies and stir, covering the surface of all the vegetables with the Roux.
Things to know about Roux:

1. If any portion of the Roux burns, throw out the whole batch & start over! You cannot save a portion of it. It’s all or nothing! It’s easy & cheap to start a new Roux.
2. After adding the flour, stir constantly with a wire whisk
3. If the oil IS OVERHEATED AND catches on fire… DO NOT THROW WATER ON IT to extinguish fire! Cover the pot with a lid or pan to smother the fire. Turn heat off and AND WAIT FOR POT TO COOL before attempting cleanup (Refer to stove oil fire video on youtube)
4. After adding the flour, stir constantly with a wire whisk
5. After the oil flour mix stops bubbling, it will cook rapidly. When color changes to chocolate, add veggies and stir to cover all veggies.
6. After adding the flour, stir constantly with a wire whisk

Woah! That video Big John is crazy. I never really had anything with fires but I still never would have know what to do in an oil fire. I know not to pour water on it just not what to actually do. Glad I know now. And your Gumbo sounds tasty.

MMMM gumbo is AMAZING if done right, just can let that roux burn in the beginning, and a little while ago there was a massive grease fire in the rotisserie oven at my work, and my exec chef put out the entire thing with 8 or 9 boxes of Salt. It was interesting to see, and slightly frightening lol

Might have been frightening but hey, salt works. I learned a lot about fire and what to avoid when putting it out when I went through my pyro phase.

Really? I didn't know that Mikey. Well now I feel safer. C:

Key Lime Pie:

-One 9" Graham cracker pie shell
-One 14 oz. can Sweetened condensed milk
-Three egg yolks (Whites not used)
-1/2 cup of Key lime juice (Goose's family and I use Nellie and Joe's famous Key West Lime Juice but I doubt you'll find it in your stores but you can try. it is a pale yellow bottle with a green lid but you can use any key lime juice.)

Combine milk, egg yolks and lime juice.
Blend until Smooth.
Pour fulling into pie shell and bake at 350 degrees for 15 min.
Let stand 10 min. before refrigerating .
Just before serving top with whipped cream.

I just thought I better mention the issue with oil fires since my recipe calls for heating oil… I don’t want to see any one of you get hurt. (I used to hate it when my Mom told me that)
The short lesson on firefighting is that fire needs 4 things to survive (burn)

1. Heat
2. Fuel
3. Oxygen
4. Space

Take out any one of the four, and the fire dies. In the Youtube video the oxygen was removed by covering the pot with a damp towel. At Kerbs work rotisserie oven, the Executive Chef extinguished the fire by removing its space.

Back to the Gumbo, this is what Big John makes Mrs. Big John when Mrs. Big John notices a new gun in “the vault”! – Always a surefire way to get Big John out of the dog house!
Ok, that’s enough educational programming for one post…now everybody –GET BACK TO YOUR VIDEO GAMES!!!
